Here’s a new breakfast recipe, my Gluten Free, No-Grain Granola is packed with goodness and the perfect way to kick-start your day.
It makes about 12-15 portions, depending on how hungry you are!
200g dessicated or flaked coconut (no added sugar, of course!)
60g chia seeds
100g sunflower seeds
100g pumpkin seeds
100g walnuts or pecans
3 tblsp coconut oil, melted
1 tsp ground ginger
2 tsp ground cinnamon
Juice & zest of an unwaxed orange
My Granola Method
Pre-heat your oven to 160C.
Combine all the dry ingredients in a bowl.
Stir in the coconut oil and add the zest and juice of the orange.
Bake for 20 minutes, checking every 5 minutes or so to prevent burning.
Serve with natural yoghurt & berries.
