Ingredients

• Steamed new potatoes 
• Steamed greens (I used asparagus, broccoli, kale and spinach)  
• 2 x smoked salmon fillets 
• 2 tblsp olive oil
• 2 tblsp cider vinegar 
• 1 tsp whole grain mustard
• big handful of parsley 

Method

Steam the spuds. Steam the greens. Mix the olive oil, vinegar and mustard. Chop the parsley and add to the dressing. Roughly chop the salmon fillets. Mix everything in a large bowl and serve warm.
