Beetroot, feta and mint salad


  • 3-4 cooked beetroot
  • 1pack (200g) feta cheese
  • a handful of fresh mint leaves
  • 2 dsp balsamic vinegar
  • 1 dsp olive oil


  • Roughly chop the beetroot into large cubes and put into a bowl. Crumble in the feta and add the chopped mint. Drizzle on the balsamic and olive oil, and lightly mix together.
