Gluten Free, No-Grain Granola

Ingredients

  • 200g dessicated or flaked coconut (no added sugar, of course!)
  • 60g chia seeds
  • 100g sunflower seeds
  • 100g pumpkin seeds
  • 3 tblsp coconut oil, melted
  • 100g walnuts or pecans
  • 1 tsp ground ginger
  • 2 tsp ground cinnamon
  • Juice & zest of an unwaxed orange

Method

  • Pre-heat your oven to 160C.
  • Combine all the dry ingredients in a bowl.
  • Stir in the coconut oil and add the zest and juice of the orange.
  • Bake for 20 minutes, checking every 5 minutes or so to prevent burning.
  • Serve with natural yoghurt & berries.
