Orange & Vanilla Granola

Ingredients

  • 1 big juicy orange
  • 2-3 tblsp agave syrup
  • 1/2 vanilla pod
  • 200g jumbo oats or spelt flakes (you can use rice flakes for a gluten-free version)
  • 75g sunflower seeds
  • 75g pumpkin seeds
  • 50g flaked almonds
  • 1 dsp mixed spice
  • 1 tblsp coconut oil

Method

  • Pre-heat your oven to 160C/300F/Gas 2. Line a large baking tray with greaseproof or baking paper.
  • Put the zest and juice of the orange into a small saucepan with the agave syrup and coconut oil.
  • Remove the seeds from the vanilla pod by slicing it lengthways and scraping out the tiny black seeds with the point of a sharp knife. Add to the orange juice and heat very gently until simmering and the agave syrup has melted. Don’t let the mixture boil.
  • Mix the dry ingredients in a bowl. Make a well in the middle and pour the orange juice mixture and oil into it and mix well together.
  • Loosely spread the mixture onto the baking tray (or over 2 trays) and place it into the oven for 25-30 minutes. Check it every 5-10 minutes to give it a shake and make sure the granola is colouring evenly.
  • Once it’sready, leave to cool and then store in an airtight container. This can be stored for up to a month (if it lasts that long!)
