Pre-heat your oven to 160C/300F/Gas 2. Line a large baking tray with greaseproof or baking paper.
Put the zest and juice of the orange into a small saucepan with the agave syrup and coconut oil.
Remove the seeds from the vanilla pod by slicing it lengthways and scraping out the tiny black seeds with the point of a sharp knife. Add to the orange juice and heat very gently until simmering and the agave syrup has melted. Don’t let the mixture boil.
Mix the dry ingredients in a bowl. Make a well in the middle and pour the orange juice mixture and oil into it and mix well together.
Loosely spread the mixture onto the baking tray (or over 2 trays) and place it into the oven for 25-30 minutes. Check it every 5-10 minutes to give it a shake and make sure the granola is colouring evenly.
Once it’sready, leave to cool and then store in an airtight container. This can be stored for up to a month (if it lasts that long!)
