Roasted plums

Ingredients

  • • 20-25 plums – cut in half and destoned
  • • 2 tblsp water
  • • 2tsp cinnamon
  • • 1tsp vanilla bean paste
  • • Toasted hazelnuts and a drizzle of honey to serve

Method

  • 1. Pre heat the oven to 200C.
  • 2. Layer the plums on a baking tray, cut side up.
  • 3. Mix the vanilla bean paste and the cinnamon with the water and pour over the plums.
  • 4. Roast for about 30-40minutes, basting the plums every 10-15minutes and cook until softened.
  • 5. Serve with Greek yoghurt, a drizzle of honey and roasted hazelnuts.
  • 6. Keep the leftovers in the fridge to have for breakfast with porridge or as a snack with yoghurt and nuts.
