Warm Potato Salad with Salmon


  • Steamed new potatoes
  • Steamed greens (I used asparagus, broccoli, kale and spinach)
  • 2 x smoked salmon fillets
  • 2 tblsp olive oil
  • 2 tblsp cider vinegar
  • 1 tsp whole grain mustard
  • big handful of parsley


  • Steam the spuds.
  • Steam the greens.
  • Mix the olive oil, vinegar and mustard.
  • Chop the parsley and add to the dressing.
  • Roughly chop the salmon fillets.
  • Mix everything in a large bowl and serve warm.
