Beetroot, Feta and Mint Salad
Ingredients
• 3-4 cooked beetroot
• 1pack (200g) feta cheese
• A handful of fresh mint leaves
• 2 dsp balsamic vinegar
• 1 dsp olive oil
Method
1. Roughly chop the beetroot into large cubes and put into a bowl.
2. Crumble in the feta and add the chopped mint.
3. Drizzle on the balsamic and olive oil, and lightly mix together.
