Mini egg fritattas

 

Ingredients

  • olive oil

  • 6 eggs

  • 2 tblsp cottage cheese

  • 1/2 pepper, finely chopped

  • 3 scallions, finely chopped

  • 6 sundried tomatoes, chopped

  • 1 tsp capers

  • 50g mature cheddar, grated

Method

  1. Pre-heat the oven to 200°C .

  2. Brush a muffin tray with olive oil.

  3. Mix the pepper, scallions, tomatoes and capers in a bowl.

  4. Beat together the eggs and cottage cheese. Season with black pepper and sea salt.

  5. Mix with the vegetables and pour into the prepared muffin tin. Top with a little grated cheese.

  6. Cook at 200°C for about 20 minutes until set and golden.
