Mini egg fritattas
Ingredients
olive oil
6 eggs
2 tblsp cottage cheese
1/2 pepper, finely chopped
3 scallions, finely chopped
6 sundried tomatoes, chopped
1 tsp capers
50g mature cheddar, grated
Method
Pre-heat the oven to 200°C .
Brush a muffin tray with olive oil.
Mix the pepper, scallions, tomatoes and capers in a bowl.
Beat together the eggs and cottage cheese. Season with black pepper and sea salt.
Mix with the vegetables and pour into the prepared muffin tin. Top with a little grated cheese.
Cook at 200°C for about 20 minutes until set and golden.
