Roasted Cauliflower

Ingredients

• 1 cauliflower
• A selection of herbs – bay leaves, some thyme, rosemary
• Olive oil
• Lemon
• Salt and pepper

Method

1. Pre-heat the oven to 170C (fan)

2. Chop the cauliflower into florets and put onto a baking sheet.

3. Add the chopped herbs, drizzle with olive oil and season with salt and pepper. Roast for 35-40minutes until the cauliflower looks golden and crispy.

4. Take out of the oven and add the zest of your lemon and squeeze over the juice of half the lemon to serve.
