Brassica Salad

Ingredients

For the salad
• ½ head of cauliflower
• ½ head of broccoli, or a large handful of sprouted broccoli
• ½ small red onion
• 8 cherry tomatoes
• 15g fresh mint leaves
• 100g feta

For the dressing
• 1 tbsp cider vinegar (with mother)
• 2 tblsp olive oil
• 1 tsp wholegrain mustard
• 1 dsp Linwoods milled flaxseed

Method

1. Chop the cauliflower and broccoli into small florets, finely slice the red onion and cut the cherry tomatoes in half and put into a bowl.

2. Make the dressing by whisking the cider vinegar and olive oil, together with the mustard and flaxseed.

3. Finely chop the mint and add to the salad.

4. Combine the salad with the dressing and crumble in the feta.
