Fennel salad with sardines

Ingredients

Serves 2

  • zest and juice of half a lemon

  • 2 tblsp olive oil

  • 1 clove garlic

  • a big handful of parsley

  • 1 fennel bulb

  • 1 apple (optional)

  • 5-6 radishes

  • 2 celery stalks

  • a handful of pecans

  • green olives

  • 1 can sardines (from a sustainable source)

  • sea salt and black pepper

Method

1. First, make the dressing. Put the lemon zest and juice into a bowl with the olive oil. Finley grate the garlic and add that to the bowl. Chop the parsley and add that too.

2. Finley slice the fennel, apple and radishes and chop the celery and put into a bowl.

3. Top with the pecans, olives and sardines and ad the dressing to serve.
