Gazpacho Soup

This gazpacho is packed with some of the best that the Mediterranean has to offer. Top with pumpkin seeds for an extra little punch of protein, healthy fats and zinc. Inspired by the gazpacho recipe in Happy Food by Niklas Ekstedt and Henrik Ennart.

Ingredients

Makes 4 servings

  • 1 red pepper

  • 1 clove garlic

  • 2 scallions 

  • 1/2 cucumber

  • 3 large tomatoes

  • 1 bunch basil (parsley works too)

  • 200ml vegetable stock or water

  • 1 tblsp lemon juice

  • 3 tblsp olive oil

  • sea salt and black pepper

Method

1. Place all the ingredients into your blender and blend until smooth. Taste and add more seasoning if required.

2. Serve the gazpacho cold in bowls topped with fresh herbs (basil and parsley are delicious).
