Tomato & Red Lentil Soup

Ingredients

• 1 dsp olive oil
• 1 onion, chopped
• 2 garlic cloves, crushed and chopped
• 3 stalks celery, chopped
• 1 tsp dried oregano
• 100g red lentils
• 1 can chopped tomatoes
• 500ml vegetable stock
• 1 tblsp tomato puree
• Sea salt & black pepper

Method

1. Heat the oil in a large, heavy based pan and cook the onion until softened.

2. Add the celery and dried oregano and cook for 2-3 minutes with the lid on.

3. Add the lentils, tinned tomatoes, stock and tomato puree and bring to the boil.

4. Simmer for 15-20minutes until the lentils are cooked.

5. Add the garlic.

6. Take off the heat and blitz in your blender until smooth. Season with sea salt and black pepper.
