Orange & vanilla granola

Ingredients

• 200g jumbo oats or spelt flakes (you can use rice flakes for a gluten-free version)
• 75g sunflower seeds
• 75g pumpkin seeds
• 50g flaked almonds
• 1 dsp mixed spice

• 1 big juicy orange
• 2-3 tblsp agave syrup
• 1/2 vanilla pod
• 1 tblsp coconut oil (melted)

Method

1. Pre-heat your oven to 160C/300F/Gas 2. Line a large baking tray with greaseproof or baking paper.

2. Combine the oats, seeds, almonds and spice in a large bowl.

3. Add the zest and juice of the orange, the agave syrup, vanilla and melted coconut oil.

5. Loosely spread the mixture onto the baking tray and place it into the oven for 25-30 minutes. Check it every 5-10 minutes to give it a shake and make sure the granola is colouring evenly.

6. Once it’sready, leave to cool and then store in an airtight container. This can be stored for up to a month (if it lasts that long!)
