Raspberry Chia Jam
Ingredients
250g fresh or frozen raspberries
1/2 tsp vanilla extract
3 dsp chia seeds
1 tsp honey (optional)
Method
Put the raspberries in a small saucepan with the honey (if using), and simmer gently for 5mins until the raspberries have softened and broken down.
Add the chia seeds to the pan and stir in. Put over a gently heat for another 3-5mins, and then leave to cool a little before putting into an airtight container.
As the jam cools, it will thicken.
Keep in the fridge for up to a week.
Good on sourdough toast, in yoghurt, porridge or ice cream!
