Tuscan Tuna and Bean Salad

Ingredients (serves 4)

  •  1 tin red kidney beans or mixed beans

  • 1 tin tuna, drained

  • 1 avocado, diced

  • 2 medium tomatoes, chopped

  • 3 or 4 sunblush tomatoes, cut in half

  • 1 celery stick, chopped

  • 3 or 4 spring onions, chopped

  • 1/2 red pepper, chopped

  • 1 or 2 roasted red peppers, chopped

  • 1/2 red chilli, finely chopped

  • Generous handful of fresh parsley, chopped

  • Juice of 1 lemon

  • Olive oil

  • Sea salt & black pepper

Method

  1. Drain and rinse the canned beans and put into a large bowl.

  2. Add the tuna, avocado, tomatoes, sunblush tomatoes, celery, spring onions, red pepper, roasted peppers, chilli and parsley.

  3. Squeeze the juice of the lemon over the salad and add a good glug of olive oil.

  4. Season to taste.

  5. Toss lightly to mix together.
