Tuscan Tuna and Bean Salad
Ingredients (serves 4)
1 tin red kidney beans or mixed beans
1 tin tuna, drained
1 avocado, diced
2 medium tomatoes, chopped
3 or 4 sunblush tomatoes, cut in half
1 celery stick, chopped
3 or 4 spring onions, chopped
1/2 red pepper, chopped
1 or 2 roasted red peppers, chopped
1/2 red chilli, finely chopped
Generous handful of fresh parsley, chopped
Juice of 1 lemon
Olive oil
Sea salt & black pepper
Method
Drain and rinse the canned beans and put into a large bowl.
Add the tuna, avocado, tomatoes, sunblush tomatoes, celery, spring onions, red pepper, roasted peppers, chilli and parsley.
Squeeze the juice of the lemon over the salad and add a good glug of olive oil.
Season to taste.
Toss lightly to mix together.
