Zesty Three Colour Salad
Ingredients (serves 1-2)
100g feta cheese, cubed
1 large carrot, coarsely grated
2 sticks celery, finely chopped
A handful of fresh coriander, chopped
1 large orange, segmented
2 tblsp mixed seeds (any of sunflower, pumpkin, sesame, flax, hemp, poppy)
1 tblsp olive oil
Juice of 1 lemon Black pepper
Method
Place the feta, carrot, celery, coriander and orange in a bowl.
Lightly toast the seeds in a large frying pan over a gentle heat until they are a golden brown colour.
Put the seeds into the bowl and add the olive oil and lemon juice.
Season well with black pepper.
