Beet Slaw
Ingredients
Serves 4 as a side
1 or 2 big handfuls of sunflower and/or pumpkin seeds
1 or 2 raw beetroot, peeled and grated
1 carrot, peeled and grated
1 small red onion, finely sliced
Generous handful of flat leaf parsley, chopped
1-2 tblsp apple cider vinegar
1-2 tblsp olive or rapeseed oil
Sea salt & black pepper
Method
Place the seeds in a dry frying pan and toast gently over a low heat for afew minutes until golden.
Combine in a bowl with the other ingredients and mix well.
Season to taste.
